Bacon and eggs… with a twist!“”

Ingredients:
  • 750g bacon, cut into small square-shaped pieces
  • 5 eggs
  • 3 onions, medium-sized, chopped fine
  • 2 tomatoes, medium-sized, chopped fine
  • 3 garlic cloves, chopped fine
  • 14” ginger piece, chopped fine
  • 2 green chilies, chopped fine
  • 12 cup, coriander leaves, chopped finely
  • 14 tsp turmeric powder
  • 2 tbsp oil
  • 1 tsp pepper
  • salt, as per taste
Method:

Add oil in a hot pan. Once slightly hot, add the green chilies, onions, tomatoes, garlic, ginger, turmeric and salt (Take care to check whether the bacon you are using has already been salted). Saute slightly and cover the pan to let to cook over a low flame.

When soft, add cut bacon and stir again. Cover and cook for about 15 minutes.Once the bacon is done, add coriander leaves and add salt, if required. Spread the mix evenly on the pan.

Etch 5 small evenly spaced pits in the bacon mix with your spatula and break an egg in each of these pits. Sprinkle salt and pepper on the eggs only again. Cover the pan and keep on a very low flame till the eggs are done.

Serve by scooping the bacon and egg together.
